You need:

Ingredients:

  • 1 break salmon - 150g
  • 1/2 zucchini
  • mixed salad - hand
  • hairdresser apples - the big capers
  • 1 twig truss of tomatoes
  • some green olives
  • roasted pine nuts
  • mozzarella cheese
  • basil

For the salmon marinade:

  • Rub salmon with oil, pepper, Italian herbs. Min. 30 min refrigerator
  • Roast pine nuts in a dry frying pan. Fry cherry tomatoes in a little oil until the skin bursts. Make courgetti with a spiral cutter (or cheese slicer/julienne cutter).
  • Heat oil in frying pan. Fry salmon on the skin side for 3-4 min until crispy. Turn over, fry other side for another 2-3 min until done (depending on thickness)
  • Place courgetti on a plate. Arrange mixed salad next to it. Place the fried salmon on top. Divide the fried tomatoes, olives – choose a colour!, capers and mozzarella/basil if desired. Sprinkle with roasted pine nuts.
