Orange above Long live the pumpkin soup

Pumpkins are still available in the supermarket and remain a delicious vegetable to use in dishes. This time I chose to use pumpkin as the main ingredient for a delicious orange soup, made almost exclusively from orange vegetables that I first grilled in the oven. The pumpkin I used for this was leftovers from a butternut squash that I had previously used to make pumpkin steaks. It's so easy to turn leftover pumpkin pieces into a tasty soup. And this is how you make the Orange above Long live the pumpkin:

First preheat your oven to 200 degrees

Remove the skin from the pumpkin with a potato peeler. Also, scrape the carrots clean and remove the outer skin of the onions and garlic cloves. Then cut all vegetables into coarse pieces.

Take a large oven dish or the baking pan of your oven and place the vegetables and garlic on it. Sprinkle with the pepper and drizzle olive oil over it.

Place the dish in the oven for about 35 to 40 minutes until the edges of the vegetables turn black.

After roasting the vegetables in the oven, pour the contents of the baking dish into a large soup pot and add half a liter of water and a stock cube. Then let it simmer for 10 minutes, so that all the flavors can mix well. Then use your hand blender and blend the ingredients into a deliciously smooth soup. The soup is now ready to serve and enjoy these delicious taste sensations.

  • 6 roots
  • 2 white onions
  • 1 block vegetable stock
