Getting my daughter to taste something new is always a challenge. So don't have any illusions she didn't eat this whole bowl but she did eat the barley that I used in it. And that is already a big victory, so big even that she wanted a second portion of these “rice grains”. Now I hear you say: “orzo is pasta and not rice”, that is indeed true but of course it does look a bit like rice. This type of pasta is originally used a lot in the kitchens around the Mediterranean. And this is how you make the Orzo salad bowl with grilled vegetables:
-If you look at the ingredients list you will think: Wow that is a lot…. But I think you already have most of the ingredients in your stash or fridge anyway. That was also the case with me. I have deliberately not indicated quantities because that is up to you. And that also depends on the size of your family.
-We're going to start with the chicken and the orzo first because that takes the longest. Cut the chicken breasts into cubes and sprinkle some chicken spices over them. Then fry them in a little olive oil in a frying pan. The orzo goes into a pan with some salt and plenty of boiling water and you cook it in 12 minutes until done.
-For the mini salad in the bowl, we use the tomatoes, olives, capers, and red onion. Chop and cut into small cubes and add some balls of mini mozzarella. Mix and toss everything together well.
- Grab a bowl and put a big handful of lettuce in it first, then add the grilled vegetables, the mini salad, the orzo, chicken and beetroot.
-I topped it off with a quick tzatziki. Cut the cucumber in half and remove the seeds. Cut thin slices with a mandolin. Place in a bowl and squeeze a garlic clove on top. Season with pepper/salt/dill and pour 100 ml yogurt over it. Just mix and voila a super simple and quick tzatziki. orzo recipe
