A salad that I used to order in the catering industry, but nowadays I never order it anymore, is the tenderloin carpaccio salad. The reason for this? Quality! Unfortunately, you will find those ultra-thin slices of meat at the average restaurant, but also in the supermarket, which are often tough and tasteless. And that's exactly why I don't order it anymore. Often this "sticky" meat from compressed large rolls from the factory, which are full of water and preservatives, here is a delicious carpaccio recipe.
I'd rather not put that in my mouth. Then what? Go to your local butcher and ask him (or her) to cut the tenderloin into nice slices. Not that wafer-thin stuff, but just beautiful slices of 3 / 4 mm thick, which are still nice and tender and juicy. Once you have eaten this tenderloin carpaccio salad recipe this way, you would rather not have it any other way. “Thank me later” as they say, because after this you are “ruined” forever. 😉

Eating a tenderloin carpaccio salad in this way has the only drawback that it may be a bit more expensive than the ready-made variant. For those supermarket packages you have a good 3,5 euros, while the meat at your butcher quickly costs double. However, I don't see that as a reason not to do it. I'd rather eat really good meat every now and then than junk. Moreover, you get a much tastier and healthier salad in return, which you can make to your own taste.

This salad is definitely worth it as far as I'm concerned! Anyway, I prefer to save on other things than what I put in my mouth. This salad is not only delicious as a starter, but also as a main course or lunch. You can serve it with a piece of bread or a nice dressing. You can also vary with the ingredients, such as cucumber, tomato, olives, Parmesan cheese or pine nuts. This way you can make a different tenderloin carpaccio salad every time!

Ingredients:
- 200 gram beef tenderloin - in slices of 3mm
- 2 eggs - cut into quarters
- ½ cucumber - cut in pieces
- 1 large beef tomatoes - cut in pieces
- 25 gram Parmesan cheese - cut into thin slices
- 2 el pine nuts
- 300 gram lamb's lettuce
- 10 olives
For the dressing:
- 1 tl honey
- 2 el olive oil
- 1 el white balsamic vinegar
- 1 tl persillade spice mix
- 1 tl French mustard
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Grab a measuring cup and put all the ingredients for the dressing in it. Beat with a whisk until you have a nice smooth dressing.
- Toast the pine nuts briefly in a frying pan, being careful not to burn them.
- First fill your bowls with the lamb's lettuce and drizzle some dressing on it.
- Spread the rest of the ingredients from the list above on the lettuce and drizzle some more dressing on top. Finish with some black pepper on the meat.
