We love cheese here at home, and I make little distinction because we all like it! A widely used cheese is Parmesan cheese. It is standard in the drawer in the refrigerator to use with all kinds of dishes. Of course great with a pasta, or on your pizza, but also a nice seasoning with vegetables. The cheese melts nicely over the carrots and becomes slightly crispy. A very nice side dish with, for example, a piece of fish and some mashed potatoes or baked potatoes. You can season them further as you like. Go for spicy and add some chili powder, or for an Eastern touch with some za'atar spice mix.

It's very simple: you replace the basil with the carrot leaves and add the other ingredients you normally use for pesto, such as pine nuts, garlic, olive oil and Parmesan cheese. This way you have a complete and sustainable dish that you can enjoy!

Ingredients:

  • 1 bos carrots
  • 75 gram grated Parmesan cheese
  • 2 tablespoons pine nuts
  • olive oil
  • Persillade (spice mix)
  • fresh parsley sprigs

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat your oven to 200 degrees.
  • Scrape the carrots clean with a knife. Leave a small piece of the greenery at the roots. Then cut them lengthwise into quarters.
  • Line a baking tray with baking paper, place the carrots on it and drizzle some olive oil over it. Sprinkle with some persillade and the Parmesan cheese and put in the oven.
  • Bake for 15 minutes and then toss everything well and bake for another 10 minutes.
  • Meanwhile, toast the pine nuts in a frying pan and finely chop the fresh parsley.
  • Remove the carrots from the oven and place on a platter, sprinkle with the parsley and pine nuts and serve.
  • Delicious bites!
