Pak choi or pak-choi is a Chinese type of cabbage with green leaves. And strangely enough, most bok choy you buy in the supermarket will come from the Netherlands. It is grown in abundance in the greenhouses here in our little country. You have the large version with white stems and green leaves, but there are also small baby bok choy available. And that's what I used in this recipe. These are a little harder to find in the average supermarket, but certainly in wholesale.

Top it off with some crunchy ginger prawn crackers.

And while you're there, take a lot of different types of mushrooms with you. You can also find them in your supermarket. You can supplement this poké bowl to your own taste by, for example, pouring salty soy sauce over it, or very sweet soy sauce. But just what you prefer.

Ingredients:

  • 200 gr brown rice
  • 2 baby bok choy
  • ½ cucumber
  • 20 champignons
  • 200 gr chicken breast
  • black sesame seeds - to garnish with
  • salt pepper

To cook with:

  • 4 el rice vinegar
  • 2 el sugar
  • salt pepper
  • 5 el Lee Kum Kee black bean garlic sauce
  • wok oil

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Cut the chicken breast into cubes and put them in a bowl. Add the black bean sauce and let it marinate. (You can also do this the night before so that the flavors infuse into the chicken).
  • Cut the cucumber into small cubes and put them in a bowl. Sprinkle over some salt and toss. Add the rice vinegar and sugar and let it sit for a while. Turn every now and then.
  • Wash the pak choi and cut them in half. Dry well with a clean tea towel. Heat the frying pan and pour in some wok oil. Bake the pak choi with the cut side down for a minute or 3. Pour in 2 tbsp soy sauce and let it steam for another 5 minutes with the lid on the pan.
  • Meanwhile, cook the rice according to the package.
  • In the wok with some wok oil, fry the pieces of chicken breast until tender. (Save the sauce to pour over the rice if you wish).
  • Remove the pak choi from the frying pan and fry the mushrooms briefly in the soy sauce.
  • Grab the bowls and scoop the rice into them first. Fill it up with the rest of the ingredients.
  • Delicious bites!
-Serve with ginger prawn crackers, for example, or fried banana chips.
