Bell pepper artichoke salad with Parmesan dressing

Sometimes you hear a tune, or smell a certain scent and then your head fills with beautiful memories. It takes you back to that time you spent with your family or with a loved one and makes you think back with nostalgia to times gone by. So also with this salad, once and then I'm talking about at least ten years ago I ate a salad in a kind of brasserie in France. Pepper artichoke Vegetarian salad with Parmesan dressing

I was there on holiday with Jaap and friends and it was mainly the dressing that stayed with me. Parmesan cheese was used in it. Now years later I made this delicious paprika artichoke salad with it parmesan dressing, and it tasted more than good to me. The advantage is, I can now share the recipe with you!

In this recipe I started working with my sousvide stick and vacuum device. I get that not everyone has that. So you can replace the bell pepper with roasted bell pepper from a jar that you can buy in the supermarket. These are also so nice and soft and full of flavor.

Prepare the bell pepper sous-vide

And this is how you make it:

Take the peppers and cut them into strips, take the vacuum bags and put one color in a bag and the other color in another bag. I added a shallot and two garlic cloves to the red pepper. In the bag with the orange pepper, two sprigs of parsley, fresh thyme and freshly ground pepper. Because you vacuum the bags, the flavors of the herbs are completely absorbed into the pepper.

Place the stick in a large pan and fill it with water to the mark on the stick. Set it to 83 degrees and 50 minutes. Once the water is up to temperature, place the bags in the pan and all you have to do is wait. (Or in this case prepare the rest of the salad in advance)

Making the dressing

Put all the dressing ingredients in a bowl or a preserving jar and mix well, the cheese is heavier so it will sink to the bottom. Just before you pour it over the lettuce, shake or whisk it once. Vegetarian salad

Wash the romaine lettuce and cut into pieces, I ran it through my salad spinner.

Put the lettuce together with the bag of spinach in a bowl and pour some dressing over it, toss everything well.

Then you finish the salad by adding the rest of the ingredients. Remove the peppers from the bags and cut them into small pieces. They are now super soft just the way I like them. Sprinkle some extra cheese on the salad and serve with nice coarse bread.

You need:

Sousvide stick and vacuum device

Ingredients:

  • 1 krop romaine lettuce
  • 1 bag young leaf spinach - or salad mix of your choice
  • 1 handful roasted pine nuts
  • 1 can artichoke hearts
  • 1 yellow and red bell pepper
  • 3 el Sun dried tomatoes
  • Parmesan cheese - to garnish some extra

For the dressing you will need:

  • 80 ml extra virgin olive oil
  • 50 ml Red wine vinegar
  • 1 el Persillade (spice mix) - Click here for the Delicious Happen persillade at Van Beekum
  • 1 tl garlic powder
  • 75 gr Parmesan cheese - those dry grains in a bag

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:
