I really like a nice soup as a starter. It's a good way to start the meal. I don't have to have a whole bowl full right away, but just a nice bowl is enough. That way I can still enjoy the other courses. A while ago I was served this soup by Luuk, who came to eat at my house. We organized a nice dinner together. And what struck me about this dish was its simplicity. You don't need many ingredients at all for this paprika soup with pancetta. But it still has a wonderful taste. It is a combination of sweet, salty and creamy that goes together perfectly. I liked it so much that I asked Luke for the recipe. And this is how you make the Paprika soup with pancetta:
We'll start with the peppers. Clean them and remove the seeds and ribs from the peppers. Then cut them into small pieces.
Chop the onion and garlic cloves very finely.
Then take a frying pan and heat it. Add some olive oil and fry the onion and garlic until translucent. Not at too high a temperature. Add the turmeric and fry for a minute. Then add the bell pepper and fry it gently for about five minutes.
Making the soup
Meanwhile, heat a pan with the water and stock cube. This may be beef stock, but it may also be a garden herb cube. Add the contents of the frying pan to the water and let it simmer for about fifteen minutes.
While the soup is cooking, you can prepare the pancetta and parsley. You will need this for garnishing the soup. Take a frying pan and heat it on high heat. Add the pancetta to the pan and fry on both sides until golden brown and crispy. This takes about 10 minutes. Remove the pancetta from the pan and drain on kitchen paper. Then cut them into small pieces. Then grab a cutting board and a knife and finely chop the parsley. Put the pancetta and parsley together in a bowl and set aside until you are ready to serve the soup.
Paprika soup with pancetta
The last step in this pepper soup recipe is to puree the soup. You need a hand blender for this. Place the hand blender in the pan and blend the soup until there are no chunks left. You want a smooth and creamy soup. Once you have achieved that, you can start serving the soup. Take a number of bowls and spoon the soup into them with a soup spoon. To finish it off, you can pour a dash of cooking cream over the soup. This gives an extra creamy effect. Then sprinkle some parsley over the soup for some color and flavor.
