Pearl couscous salad with sun-dried tomatoes
Recipe on request! I ate a delicious salad at the Bijenkorf and was promptly asked: "Do you have the recipe for me?" Euhm no... But I immediately dived into the kitchen to recreate it based on the photo I took of my food. And so I have a pearl couscous salad with sun-dried tomatoes for you. (And many more ingredients of course) Did you know that the word couscous is a corruption of the Arabic word “keskes”? And because couscous is prepared in a keskes : it was therefore called kuskus. It is a very old dish and has been made for centuries, the first time it was described was in the thirteenth century in an Andalusian cookbook. couscous salad recipe
And this is how you make Pearl couscous salad with sun-dried tomatoes:
-First cook the pearl couscous and the orange lentils as indicated on the package. There is usually neatly described exactly how much water and how many grams of couscous you need to add. It takes about 10 to 12 minutes.
- Cut the broccoli into very fine and small florets.
- Likewise with the eggplant, the onion, and the sun-dried tomatoes cut or chop them into small pieces. In this case, I bought semi-dried tomatoes from the fresh produce shelf at the supermarket. You can also make these yourself of course.
-Take a frying pan and add some olive oil, when it is hot, add all the chopped vegetables and fry them for about 5 minutes on medium heat. Basically just until they are nice and soft.
-When the pearl couscous is cooked, drain it and put it in a bowl. Add 1 or 2 tablespoons of ras-el-hanout to this and add a splash of olive oil. Mix together.
-Finally we add the vegetables from the frying pan and some pumpkin seeds and toss the salad with large spoons. You can always use some salt and pepper to spice up the salad.
