Pearl couscous salad with feta
Pearl couscous is a delicious variation on the regular couscous that you may have eaten before. The difference is in the size of the grains, which in pearl couscous are somewhat thicker and rounder. This gives a nice bite to your salad. We give this salad some extra spice by finely chopping some green jalapeño peppers and mixing them with the salad.
Don't like spicy? Then just leave them out. This pearl couscous salad with feta is easy to make, because the couscous only needs to cook for 10 minutes. Also ideal if you are in a hurry or if you want to take something tasty with you for a picnic or barbecue.

Ingredients:
- 150 gram pearl couscous
- 200 gram broccoli - in little roses
- 15 green olives
- 2 el everything but the bagel seasoning
- 100 gram Feta - crumbled
- 2 jalapeño pepper - finely chopped
- 2 twigs Parsley - finely chopped
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Put 2 pans of water on, when the water boils you cook the pearl couscous in one pan for max 10 minutes, in the other pan blanch the broccoli florets for about 3/4 minute. Drain both equally well in a colander.
- Place the pearl couscous in the dish and pour over a little olive oil and 1 tablespoon of the spice mix. Mix it up.
- Then you finish the salad with the blanched broccoli, green olives, the chopped peppers, parsley and another tablespoon of spice mix. Mix well one more time.
