We're going to shake again! This time we make a “sour cocktail”, which is an original cocktail that consists of a number of components. Your base is a liqueur or spirit. Just think of a Whiskey sour or a Pisco sour. You've probably heard these names before. Then of course you need lime or lemon juice and a sweetener such as sweet syrup. Sometimes, but not always, egg white is also added for a beautiful foam layer. I did that with this passion fruit sour with lime juice. Due to the color of the drink, the foam becomes light salmon-colored. That makes it a beautiful drink! So let's shake it up and cheers. lime cocktail

Passion fruit sour with lime juice
We shake this cocktail with a “reverse dry shake” technique. Say whut no?! Yes, shaking cocktails is a world apart that I am discovering. You shake your cocktail twice in this case. First with ice and then without ice. We do that with this passion fruit sour with lime juice because we want a nice foam layer. Ice cream has the disadvantage that it "breaks down" the proteins in the egg and thus will reduce your foam.

Shaking first briefly with ice and then again without ice ensures a nice fluffy layer on your cocktail. And so we shake a Francine-Original sour cocktail.

Ingredients:
- 80 ml passion fruit juice
- 60 ml pink gin
- 30 ml lime juice
- 1 el sugar syrup
- 1 protein
- 1 passion
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Grab your shaker and fill it with a few ice cubes. Fill the shaker with all ingredients except the passion fruit from the list above.
- Shake very vigorously for 20/30 seconds (your hands will get cold!)
- Pour the cocktail through a strainer into a cold glass and remove the ice from the shaker.
- Pour the liquid back into the shaker and shake again very vigorously for a few seconds, we do this to get a very nice foam layer.
- Pour the cocktail into the glasses and carefully place half a passion fruit on the foam. Serve immediately!
