- 2 red peppers
- 200 gram pasta
- 1 white onion
- 2 toes Garlic
- 200 gram cottage cheese
- 10 green olives - in slices
- 1 Eggplant - in small cubes
- salt
- 2 el Italian spice mix
- 1 shallot - XNUMX onion - shredded
- 2 el olive oil

And this is how you make it:
- Preheat your oven to 200 degrees.
- Clean the peppers, garlic cloves and onion and chop into coarse pieces. Place in the oven dish with a dash of olive oil and grill in the oven for 30 minutes.
- Cut the eggplant, chop the shallot and fry in a frying pan in some olive oil with the Italian herbs until soft.
- Cook the pasta in a pan with some salt and then drain.
- Remove the oven dish from the oven and put the grilled vegetables in the blender and blend into a nice smooth sauce. Add this sauce to the pan with eggplants.
- Also add the pasta and olives and mix well.
- Spoon the pasta onto the plates and spoon the cottage cheese on top.
