I was recently in Rome to take some time for myself. Quite exciting because I had never really traveled all alone before. I have actually boarded a plane before, but spending six whole days alone in a major metropolis was a first! I was most dreading eating alone, but that actually turned out well for me. The waiters are happy to have a chat with you, and sometimes there is someone sitting next to you who will strike up a conversation with you. I ordered this pasta on a sunny, somewhat remote terrace hidden behind a green hedge near a typical Italian square and I didn't regret it! So simple, but so much flavor... Of course I had to make that again at home and share it with you. So get started with this pasta with rosemary and tomatoes.

In the photo you can see a kind of wooden spoon. That's a kind of measuring stick for the amount of uncooked pasta you should use. I bought it at the Campo di Fiori market, the Foodie market where they sell all fresh products. Vegetables, fruit, juices, and beautiful crockery and these kinds of nice kitchen supplies. In that respect, Rome is truly a wonderful city where you can enjoy good food everywhere. Try to ignore the hysterical touristy squares, often around the corner there is a small place where you can eat really well. This vegetarian pasta was really delicious, and with only a few ingredients!

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Cook the spaghetti al dente in a pan with water and salt.
- Heat your frying pan and add a dash of olive oil, over low heat fry the rosemary leaves that you have removed from the sprig. Add the tomatoes, red pepper and butter and let melt.
- Drain the pasta but keep a little pasta water in a cup.
- Add 50 ml of pasta water to the frying pan and add the drained pasta to the pan and mix well.
- Spoon the pasta onto plates and sprinkle with the cheese and some pepper and serve immediately.
- Delicious bites!
