So I can really enjoy that: a homemade fresh pasta sauce. And actually it tastes slightly different every time because you add just a few different herbs. Of course I won't write a recipe for every sauce, but I wanted to share this recipe for a basic sauce for pasta, because it tasted so good! A very nice basic recipe so this pasta sauce. By the way, the bottom plates in this photo have a nice story. I bought this a few weeks ago in a brocante shop in France.

There were only two of them and when I saw them I wanted to be right. And so these beauties got a place in my overflowing china cabinet and I could now use them nicely. We will quickly get started with the pasta sauce à la Francine!

Ingredients:
- 500 ml past - good quality tomato sauce
- 250 gram half and half chopped
- 125 gram bacon
- 2 onions - finely chopped
- 3 toes Garlic - finely chopped
- peper
- salt
- 3 tablespoons fresh thyme - finely chopped
- 10 fresh basil leaves - finely chopped
- fresh pasta - optionally
- Parmesan cheese - freshly grated
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- We are going to chop the onions and garlic first. I always put this aside on a saucer until use. The fresh herbs must also be very finely chopped. You can of course use a bag of dried Italian herbs, but with fresh herbs it is so much tastier!
- Heat a dash of olive oil in a large frying pan over medium heat. Add the chopped onion and garlic and cook for 3-4 minutes until soft and fragrant. Add the bacon cubes and increase the heat slightly. Cook for 2-3 minutes until the bacon starts to crisp up
- Then we will add the minced meat, with a spatula you press the meat apart and mix it with the bacon and the garlic-onion mix. Season to taste with the fresh herbs and salt and pepper.
- Pour in the passata and stir well through the meat. Bring the sauce to the boil and then let it simmer gently on low heat for 10-15 minutes until the sauce has thickened. Stir occasionally to prevent burning
- While the sauce is simmering, we make the tortellini or other pasta of your choice.
- Finally, grab your plates and spoon in the sauce, put the pasta on top and grate some fresh parmesan cheese on top. I always choose a block of cheese that I shave off myself. This tastes so much better than the one from a bag and it's so squeaky
