Although I am quite a meat eater, I sometimes make vegetarian dishes. I also love mushrooms and they are great meat substitutes. Now I think the word “replacement” is a little bit of an itchy word… Meat does not necessarily need to be replaced by me. This gives rise to the idea that what you replace the meat with is actually less tasty. And this is how you make the Parsnip stew with mushrooms:
-First take the parsnips and peel off the outer skin with a vegetable peeler. Then cut them into small cubes and put them in a pan with water. Make sure they are submerged, but don't overfill the pan with water. Sprinkle some salt and pepper on it. Cook the parsnip without a lid, otherwise you won't see whether the pan is boiling dry!
- Cut the garlic cloves and the piece of celeriac into very fine cubes. Put this in a small frying pan with some butter and let it braise on a low heat until it turns golden brown. This can take up to 15 minutes.
-As soon as the parsnips are soft, drain the cubes and put them back in the pan with the 25 grams of butter. With a pestle you mash the whole into a paste. If you want to give the stew extra flavor, now is the time to add, for example, a tablespoon of mustard.
-In another frying pan, fry the mushrooms until they have a nice color and are nice and soft.

Scoop the parsnip mash in a bowl and add the braised celeriac with garlic. These are now super light and give a delicious taste to the dish. Finally, you scoop the mushrooms on top and garnish with some roasted pine nuts
