Now that we are heading towards winter, it is also nice to start making winter cocktails. Tasty spicy syrup and fruit that fits perfectly with this season. I love it myself licorice root, I often drink it as a tea, but you can also add it to your syrup as a seasoning. Just break a stick into pieces and let it soak in the syrup. This pear syrup gin cocktail has a nice head because of the protein that we shake in the cocktail shaker. We shook twice, once with and once without ice. This gives a beautiful foam layer.

I'm repeating myself a bit with this, as with my other cocktails, but again you can also serve this virgin. Nowadays you can find all kinds of nice and tasty alcohol-free versions online, but also in many liquor stores.

The syrup can be kept for weeks, so you can easily store it in a glass bottle in the refrigerator. You can even make flavored Spa with it, for the necessary refreshment on hot days. Enjoy the endless possibilities and experiment with different combinations of flavors!

Herbs and spices
You can also vary endlessly with this. Try with cinnamon or pink pepper balls. I chose liquorice this time, fennel seeds, and star anise. As far as I'm concerned, those are perfect flavors that fit the winter.

- 100 ml gin
- 50 ml lemon juice
- 1 protein
- 3 el pear syrup
- 2 star anise - for decoration
To make the pear syrup:
- 2 the kickers - core out, in cubes
- 4 star anise
- 1 stick licorice root - broken
- 1 el fennel seeds
- 200 gram sugar
- 250 ml water

And this is how you make it:
- First we make the syrup. Put all ingredients in a pan and bring to a boil. Let it all simmer for twenty minutes. Mash the pieces of pear with a stamppot pestle and pass it through a very fine sieve. Pour into a glass bottle and let cool.
- Grab your shaker and add the gin, lemon juice, egg white, and pear syrup. Shake for 30 seconds.
- Put a few ice cubes in the shaker and then shake again for 30 seconds and then pour through a strainer into the glasses.
