hello! We continue our journey through the Peruvian jungle. It will be a fantastic trip that is a dream for many travelers to make one day. The Peruvian jungle begins in the eastern foothills of the Andes and extends to the borders with Brazil, Colombia and Ecuador. The Peruvian Amazon has a rainy tropical climate. A typical Peruvian breakfast is tacacho con cecina. A ball made of banana, bacon and dried meat. Here in the Netherlands we may not have all the ingredients at hand. So I adjust it a bit so that we can just buy everything from the supermarket. tacocho recipe
The Peruvian jungle
This area is one of the treasures of Peru. Thanks to its diverse flora and fauna that also play an important role in preserving the ecosystem. When talking about Peruvian fauna, don't just think of tarantulas or anacondas. Peru is the second country in the world with the largest number of bird species. And the third country in terms of the number of mammals. Many of these animal species are found nowhere else in the world.
To the jungle with the family
My great-grandmother, grandmother and mother were fascinated by the flora and fauna of this region. Not only because of the beautiful flowers and trees, but also because of the medicinal plants. I always heard from them about the “uña de gato”, “Sacha Inchi”, and “achiote” which are medicinal plants. The Peruvian jungle is very diverse and has many different species of these plants. There are many botanical species living in this region that are still undiscovered and that need to be classified. It is a beautiful area where you can really enjoy the life of nature. My first experience in the jungle was when I was 5 years old. The contact with nature was direct and beautiful. One of the most beautiful parks there is the Manu National Park which has an enormous diversity of flora and fauna and it is not for nothing that it was named a UNESCO World Heritage Site in 1977.
The cuisine of the Amazon
It is the most exquisite in the world thanks to the diversity of ingredients, flavors and textures that together stimulate the senses and generate grandiose taste sensations. It is a huge paradise of flavors that you have probably never experienced before. Fish is also one of the main components of many dishes that come from rivers of the Amazon. “Patarashca” is one of my favorite fish dishes from this region. It is made with stuffed fish cooked on the grill and flavored with spices typical of the Peruvian jungle. It is then wrapped in a bijao leaf and roasted on charcoal.
An exciting local snack….
Amazonian cuisine also has its local delicacy and hopefully the idea of this snack won't make you sick. The delicacy I mean is “Suri” it is a woodworm and it has many properties. The worm looks greasy and is five to ten centimeters long. Some people prefer to eat it raw, cooked or roasted. Would you dare?
Peruvian breakfast tacacho con cecina from Aunt Sofia
The recipe I'm going to share this time is one of the most delicious dishes from the Peruvian jungle. It is the "tacacho con cecina" this dish is very popular during the "San Juan Festival". It will be held on June 24 in Iquitos, Yuirimaguas, Pucallpa, Tarapoto and other Peruvian Amazon cities. It is prepared on the basis of green plantains and is eaten with dried and smoked meat.
I learned this dish from my Aunt Sofia who is from Iquitos. Traditionally, it is made from plantan, a kind of plantain that is boiled and then pounded in a large mortar. Then mixed with bacon and salt and rolled into a ball. Traditionally served with dried pork called “cecina”. But it is also served with chorizo. taco recipe

Ingredients:
- 4 fry bananas
- 100 gram smoked bacon
- 3 bacon bits
- salt
- sunflower oil
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Peel the plantains and cut into pieces. Then fry them in a deep fryer until well cooked inside and mash with a pestle in a large mortar or bowl.
- Meanwhile, brown the smoked bacon in a little oil and let it cool down for a while. Add the bacon and the oil from the pan to the bowl or mortar and mix well with the mashed banana. Then make balls the size of your hand. (may also be slightly smaller, e.g. like a golf ball).
- Fry the three bacon pieces with salt and pepper to taste. They don't have to be completely baked.
- Chop / shred all the ingredients for the cocona aji and add to a small bowl with the juice of the limes. This is a tasty salsa that you serve with the tacocho.
- Serve the balls on a platter with a piece of bacon on the side.
