It's vacation time, but before I leave I wanted to share with you a Peruvian recipe that is perfect for the summer. This dish is my favorite and my family in Peru loved it when I cooked it for them. Also super healthy and easy to prepare. The big star of this dish is our delicious Peruvian Aji Amarillo. The Peruvian pepper. Peruvian escabeche de pollo is a kind of chicken marinade and it is a typical Peruvian dish. This dish is usually eaten as a cold starter. The longer it can rest, the more intense the flavor becomes. The escabeche marinade is a food preservation technique.

Peruvian escabeche de pollo

A cooking technique based on the introduction of a food in an acidic solution with vinegar and along with the aji amarillo. Together they make a fantastic combination that gives flavor to your dish.

This dish is not only delicious with chicken, but can also be easily prepared with fish. The method of preparation remains basically the same, only you replace the chicken with fish. This allows you to enjoy the same tasty herbs and spices, but with a different protein source that better suits your personal preference or diet.

You need:

Ingredients:

  • 2 chicken legs
  • 2 Red onions - julienne cut
  • 2 eggs - in quarters
  • 10 black olives
  • 2 aji amarillo peppers - julienne cut
  • 3 sweet potatoes
  • 1 teen Garlic - XNUMX onion - shredded
  • ½ block chicken bouillon
  • 3 tl yellow Peruvian pepper paste
  • 2 tl Peruvian panca pepper paste
  • 3 el Red wine vinegar

Herbs / Spices:

And this is how you make it:

  • Chop the onions and the aji amarillo pepper and put them in a bowl with the vinegar.
  • Season the chicken with salt and pepper and fry in a frying pan with hot oil until golden brown and cooked through. Remove from pan and set aside.
  • In the same pan, fry the garlic, aji panca pasta, aji amarillo pasta, some salt and pepper to taste and the oregano over medium heat in the same pan with some extra oil.
  • Add the onions and aji amarillo and vinegar from the bowl and let it simmer for a few minutes.
  • Dissolve the 100/1 cube of chicken stock in 2ml of hot water and add it to the frying pan and let it cook for a few minutes.
  • Pluck the chicken from the bones.
  • Add the onion-pepper sauce to the chicken and mix it all together.
  • Boil the eggs and sweet potatoes.
  • Grab a bowl and divide the chicken, sweet potatoes, boiled eggs, and olives into it.
  • Delicious bites!
