Quinoa is a food that nourished our Inca ancestors and is still present on the menu of all Peruvians today. In this blog I share an easy and delicious Peruvian quinoa arabe salad. A quinoa salad recipe that you could serve as a side dish at Christmas dinner.
A healthy superfood
To be honest, growing up I didn't like it. But my mother was always very creative in the kitchen and she incorporated it into the meals in different ways. She said each time that it was very “bueno” for me. Although I was reluctant at first, I started to appreciate it more and more. Now I love this dish and I look back on that time with warm memories of the pleasant moments in the kitchen with my mother. Her creative cooking has helped me develop a broader palate and I am now open to new culinary adventures.
Quinoa contains important minerals, such as calcium, which are ideal for strengthening and protecting the teeth and bone system. But also phosphorus, involved in the formation of proteins; magnesium which provides energy to the body and iron which is ideal for the red blood cells. It also has vitamins E, B1, B2, and niacin.
Today I'm sharing a quinoa salad recipe that I've tweaked a bit to my liking. And I think you'll like it too. Get started with this Peruvian quinoa arabe salad.

Ingredients:
- 500 gram Quinoa - ( cooked )
- 1 Red onion - XNUMX onion - shredded
- 4 toes Garlic - XNUMX onion - shredded
- 2 el ay amarillo pasta - (pepper paste)
- 1 p - in small cubes
- 3 el white raisins
- 3 el pecans - finely chopped
- 120 ml broth - beef or vegetable stock
- 120 ml beetroot juice - * see notes to make yourself
- ½ package glass of noodles
- salt
- peper
- sunflower oil
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Make the beet juice. You can also buy this at the supermarket.
- Cook the quinoa according to the package, make sure you have about 500 grams when it's cooked.
- Clean the vegetables and chop or slice them.
- In a large pan with a thick bottom, fry the onions, garlic, aji amarillo with some oil until the onion is translucent. Add the bell pepper cubes and fry briefly.
- Add the cooked quinoa, raisins, and pecans. Add the stock and beetroot juice, stir well and cook for 2 minutes.
- Pour a layer of sunflower oil in a frying pan and heat it. Sprinkle in some dry glass noodles and let them "grow". This is a bit like making prawn crackers. Once they are golden brown, take them out of the pan and let them drain on a piece of kitchen paper. Half a pack of glass noodles is enough for 4 people.
- Place the crunchy glass noodles on top of the quinoa salad and serve.
