The other day I was alone and completely lost track of time, half past seven in the evening and my stomach was growling! Time to quickly put something on the table. A pasta is always good so I quickly put something together, shared a story about it on Instagram and you can guess what happened next. If I had the recipe…. Well, no, I didn't have that, but because I'm not the least, I'm writing it down for you now from this pesto pasta with burrata. Nice and simple and quick, but still full of flavor.

Pesto Pasta with Burrata – Quick and Tasty Italian Recipe
You can buy the pesto in the store, or you can make it yourself. It depends on what you have time for. For me it is never a question, I always go for the homemade stuff! It doesn't have to be complicated, and it tastes so much better. I always have fresh basil in my windowsill, it smells really delicious! Oh, and don't forget, I always have some Parmesan cheese in my fridge, and also pine nuts in the pantry, because they are really indispensable in my kitchen cupboard. And then you're done, add a little oil and salt, put it in the blender and voilà, your pesto is ready.

And if you want a little extra luxury, I often have a burrata or mozzarella in the house. That burrata, oh, so deliciously creamy! I always like to experiment with it. Perfect to combine that freshly made pesto with, and that way you can quickly conjure up a real Italian dish on the table!

- 100 gram spaghetti
- 1 el pesto
- ½ burrata
- 150 gram Cherry tomatoes
- 10 green olives
- 1 el pine nuts - roasted
- 4 leaves fresh basil
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Place the cherry tomatoes in an oven dish and bake them for 10 minutes at 200 degrees so that the skins burst open a little.
- In the meantime, cook the spaghetti with some salt.
- Drain the spaghetti and place in a bowl. Spoon the pesto on top and toss a little. Add the tomatoes, olives, pine nuts and place half a burrata on top.
- Garnish with some fresh black pepper and basil leaves and then enjoy!
