-First we start by making the pesto, put everything in a food processor. Pulse until it is a nice mixture and then add some olive oil. Mix it up a bit and it's ready. Set aside until use.
Then preheat your oven to 200 degrees.
- Now take the chicken breasts and cut them with a sharp knife. Don't cut them all the way through, but far enough that you can unfold them nicely. Spread pesto on both sides.
-Put some spinach leaves on the pesto layer, then some slices of mozzarella, then some tomatoes and then a slice of Parma ham. Fold the halves back together and secure with a skewer so that nothing can fall out. Sprinkle chicken seasoning on top. Then place them in a baking dish with olive oil on the bottom. Place in the oven for 25 minutes.
-Meanwhile, stir fry the rest of the spinach in a frying pan and let it drain.
- Boil the tagliatelle in a pan with plenty of water and some salt. When it is cooked, add the rest of the pesto and mix well. Add the spinach and tomatoes and a small splash of olive oil.

And finally, take the chicken out of the oven, take the plates and first place the tagliatelle on top, then spoon the chicken fillet on top.
