I fried the cheese balls in this recipe in peanut oil, a vegetable oil extracted from peanuts. To fry them, I heated a layer of peanut oil in a cast iron pan and carefully placed them in the hot oil with a slotted spoon. The baking time is short, so they quickly become crispy and delicious.
Once the outside has turned nice and golden brown and crispy, carefully remove the fried snacks from the pan and place them on a piece of paper towel to get rid of excess fat. Let them rest there for a while so that they can cool down and their flavor becomes even better.

Ingredients:
- 250 gram cauliflower florets
- 150 gram Tex Mex cheese grater - edam, cheddar, gouda cheese mix
- 1 ei
- 15 gram panko
- peanut oil for frying
For breading you will need:
- 2 eggs beaten
- 1 come with flower
- 1 come with half a bag of panko crumbs
For the dipping sauce you will need:
- 2 tablespoons harissa
- 3 tablespoons yoghurt
- 3 tablespoons mayonnaise

And this is how you make it:
- Boil the cauliflower florets for 10 minutes. Not longer because then they will become too soft. Drain well in a colander first. Then take a clean tea towel with it. Break the florets into small pieces with your fingers. Squeeze out the moisture by closing the tea towel.
- Add the small pieces of cauliflower to a bowl and add the egg, 15 grams of panko and the cheese grater mix. Form balls with it. I got about 14 balls out of it. Put these in the fridge for half an hour and let them set.
- Make the sauce by mixing two tablespoons of harissa with the yogurt and mayonnaise. Add some fresh parsley and your sauce is ready.
- Prepare three bowls, one with a layer of flour, one with the two beaten eggs, and the last with the panko crumbs.
- Roll the balls first in the flour, then the egg and then the panko.
- Heat a pan with a layer of peanut oil and slide about 5 balls into the oil with a slotted spoon. Bake them until the outside is a nice golden brown. Drain on a kitchen paper. Repeat with the rest of the balls.
