In the kitchen I suddenly found myself in a state of complete confusion. My weekly menu was within reach, but the whole week was a bit more chaotic than planned. The right meat was missing, as well as the vegetables I wanted to use. That is how this tasty variant of nasi was born: a spicy bulgur nasi with chicken thigh. A number of ingredients in this recipe come from a spice bag or jar. There's nothing wrong with taking advantage of that! Preparing bulgur is not difficult at all. To be honest, I thought this was a very welcome change from the traditional nasi with rice. And for those wondering where the “spiciness” is, it is in the bulgur salad with chicken.
You're not a big fan of peppers, are you? That's right, I was also blown away with the pepper mix. My husband was fine with that, I was on fire.

So preparing bulgur is just as easy as rice. The advantage is that I like this better than whole grain rice. That is often a bit dry in taste and the bulgur is not. It is made from different types of wheat. These are first steamed, then dried and then ground or crushed. The most famous preparation is taboelé. But in this spicy bulgur nasi with chicken thigh it is a nice replacement for the standard white rice.
In principle, you can adjust the vegetables yourself to what you like. So it can certainly serve as a tasty zero-waste bulgur recipe. I do recommend that you choose chicken thigh because it is a bit fatter and does not dry out like chicken breast does.

- 150 gram bulghur
- 350 gram chicken thigh
- 3 tablespoons red pepper mix - (tray of fresh produce)
- 1 (tray of fresh produce) can of flagolettes - Beans
- 1 Red pepper
- 1 bag green asparagus tips
- bean sprouts
From the pantry
- wok oil
- nasi spice mix
- soy sauce

And this is how you make it:
- Cut the chicken thigh into cubes. Place the wok on high heat and fry the cubes in some wok oil until golden brown. Add a dash of soy sauce and the three tablespoons of red pepper mix and reduce the heat to low.
- Cut and chop the bell pepper small, the asparagus tips into 2 cm pieces and drain the can of flagolettes. Then add this to the chicken and sprinkle the nasi herbs over it to taste.
- Put 500 ml of water in a pan and bring to the boil. Add the bulgur and let it cook for 10 minutes, then drain and let it drain.
- Add the bulgur to the wok and mix well. Serve with some fresh bean sprouts.
