Migration is as old as humanity itself. We are born somewhere, but we go out anyway. We settle on the other side of the world. There we make a whole new life for ourselves. And our food culture? We take it with us and adapt it to the country where we live. We buy the products that are available there and mix them with old recipes. Also with this Spicy Chicago style Giardiniera. Traditionally a classic Italian recipe.
Due to massive migration from poor Sicily in the early 19th century to the promised land, we now have a renewed pickles recipe. Chicago is a melting pot of diverse cultures. They all have their own influences.
The Italians have left their mark on it with, for example, this Giardiniera recipe. But the Chicago style deep dish pizza has also become a classic. The Italian beef sandwich is also a well-known sandwich. More about that later in another blog because we need this Chicago style Giardiniera for that too!
Spicy Chicago style Giardiniera
And so you see that through migration a recipe is adapted to the country or region where people settle. In Chicago, this Giardiniera recipe does not actually use vinegar, but only olive oil supplemented with some water. If you want to keep the vegetables a little longer, it is better to add something because that way the vegetables will keep longer. Think of the preserving jars of the past with which everything was put on acid so that you also had vegetables in the winter.
This pickle recipe differs slightly from the original by cutting the vegetables a lot smaller. Sometimes even finely ground in a food processor. It almost becomes a kind of tapenade that is spread on sandwiches. All in all very versatile to use so this Giardiniera!

Ingredients:
- 80 gram salt
- ½ Cauliflower - in little roses
- 1 Red pepper - in cubes
- 15 green olives - cut in rings
- 1 jalapeño pepper - cut in rings
- 6 roots - in slices
- 3 celery stalks
- 1 Spanish / chili pepper - cut in rings
from the pantry:
- 350 ml olive oil
- 100 ml White wine vinegar
- 50 ml water
- 6 allspice grains
- 1 el mustard seed
- ½ tl chili flakes
- 1 tl dried oregano
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Cut all vegetables into slices/cubes/rings. The vegetables can be cut a bit finer than with the classic Giardiniera! Do not add the olives until later.
- Put all the sliced vegetables in a bowl and sprinkle the 80 grams of salt on it, top up with water until everything is completely submerged. Place the bowl in the refrigerator overnight. The next day, rinse the vegetables well in a colander and drain.
- Take your jar and put all the spices in it, fill with the vegetables and now the olives that you have sliced can also be added. Top up with the oil and vinegar. (Officially only oil and possibly some water, but because of the vinegar it has a longer shelf life). Shake well and then put in the fridge.
- Let the jar marinate for a day or two before eating.
