I have to admit, lighting the BBQ doesn't go completely smoothly, but seasoning and marinating these spicy chicken thigh BBQ skewers is no problem. The secret is to let the chicken marinate overnight. Everything usually gets better if you leave it alone for a while. The biggest job is threading the skewers, but if that's the worst part... So turn on that grill and let these skewers bake a nice golden brown and enjoy the sun yourself with these BBQ recipes.
Spicy chicken thigh bbq skewers
We use chili flakes and a spicy spice mix in the marinade and in the sauce we serve, so a nice drink to deglaze things is definitely a good idea! Have a look at my “drinks” page here on the site. Oh and the fat with the meat? That makes you feel comfortable! This melts while grilling on the BBQ and certainly gives your meat more flavor. Yes, chicken thigh is a lot fattier than regular chicken fillet, but believe me with these skewers, the thigh is really the right piece of meat. Try it yourself and you will notice how juicy and tender the meat becomes thanks to the fat.

Ingredients:
- 400 gram chicken thigh - cut in pieces
- 2 twigs Parsley
For the marinade you will need:
- 5 el soy sauce
- 3 el olive oil
- 1'' tl fajita spice mix
- 2 el mirin
- 1 el vinegar
- ½ tl chili flakes
For the sauce you will need:
- ½ tl chili flakes
- 4 el mayonnaise
- 5 el yoghurt
- 1 tl persillade spice mix
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Make the marinade in a bowl. Mix well and then add the chicken thigh pieces and mix very well. Cover the bowl with cling film and put it in the fridge overnight.
- The next day you turn on the BBQ and while it heats up, thread the chicken thighs onto the skewers.
- Put all the ingredients for the dressing in a bowl and beat with a whisk until you have a nice smooth sauce. Chop the parsley.
- Grill the skewers on the hot bbq on all sides until the meat is cooked.
- Serve with the sauce and some chopped parsley.
