I must admit that lighting the bbq is not completely flawless, but seasoning and marinating these spicy chicken thigh bbq skewers is no problem. The secret is to let the chicken marinate overnight. Everything gets better if you let it sit for a while. The biggest job is threading the skewers, but if that is the worst…. So turn on that grill and let these skewers bake nicely golden brown and enjoy the sun yourself.

Oh and the fat with the meat? That lets you sit comfortably! It will melt during grilling on the BBQ and will certainly give your meat more flavour. Yes, chicken thigh is a lot fatter than the regular chicken fillet, but believe me with these skewers, the thigh is really the right piece of meat.

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Make the marinade in a bowl. Mix well and then add the chicken thigh pieces and mix very well. Cover the bowl with cling film and put it in the fridge overnight.
  • The next day you turn on the BBQ and while it heats up, thread the chicken thighs onto the skewers.
  • Put all the ingredients for the dressing in a bowl and beat with a whisk until you have a nice smooth sauce. Chop the parsley.
  • Grill the skewers on the hot bbq on all sides until the meat is cooked.
  • Serve with the sauce and some chopped parsley.
  • Delicious bites!
