I live in the countryside and there are a lot of refrigerated vending machines at various farmers. Fresh meat directly from the farmer, or vegetables from the grower. Ideal and really very good quality. The peace and quiet of the countryside is sometimes not so bad. So get started with this zero waste spicy leg of lamb stew with vegetables. We dive into the herb drawer for some delicious fragrant herb mixes and in no time your kitchen will smell fantastic! Lamb is not for everyone, so if you really don't like it, use beef stew.

Lamb Stew with Berbere and Ras-El-Hanout | Easy Stew in 2 Hours
We season the lamb with berbere and ras-el-hanout, two mixes from North Africa that smell wonderful and give your stew a lot of flavor. So much so that I didn't use a herb bag with herbs like thyme or rosemary. They also give it a more European touch in terms of flavor. We serve it with bulgur, which is super quick and easy to make. This shows that you certainly shouldn't throw away food but can simply process everything very well in a delicious stew like this.

Ingredients:
- 300 gram Leg of lamb - in cubes
- 300 gram p - (mix of red-yellow-orange) cut into pieces
- 100 gram celery - 4 stalks cut into small pieces
- 100 gram ui - 1 onion, chopped
- 400 gram chestnut mushrooms - in slices
- 2 toes Garlic - squeezed
- 100 gram shallot - 1 large shallot, chopped
- 75 gram zucchini - in pieces
- 75 gram root - scraped clean and cut into pieces
from the spice cupboard:
- 2 el olive oil
- 1 el ras el hanout
- 1 el Berber
- peper
- sea salt
- 2 el flower
- 1 tin can tomato paste
- 150 ml tomato frito
- 2 stock cubes - + 300ml water
- 1 tl smoked paprika powder
- 1 el parsley

And this is how you make it:
- First, grab all the ingredients from your spice drawer, it may seem like a lot but once you have everything ready, preparing it will be a breeze!
- Chop/slice all vegetables as described in the ingredients.
- Cut the meat into cubes and sprinkle with the flour, berbere, ras el hanout some salt and pepper and mix it well. Brown it nicely in a tablespoon of olive oil and leave in the frying pan until use.
- Heat a frying pan or cast iron pan and add a tablespoon of olive oil and first fry the onion, shallot and garlic over a low heat until translucent, then add the carrot and celery and fry for 5 minutes over a medium heat.
- Add the rest of the vegetables, mix well and fry for another 5 minutes.
- Make a hole in the middle of the pan and fry the tomato puree briefly and deglaze with the stock and tomato frito. Add the persillade and the smoked paprika powder.
- Mix everything well again and add the meat with all the juice from the frying pan, stir and then put the lid on. Let it simmer for 2 hours and then serve with some bulgur for example.

Ingredients for an Authentic Taste
Lamb is generally a bit more expensive than pork or beef. But I certainly find it so delicious to spend a bit more money on it every now and then! You don't have to buy kilos of meat, this substance contains 300 grams and that is more than enough for me to be able to eat very well for two days.
