You need:

Ingredients:

  • 300 gram Leg of lamb - in cubes
  • 300 gram p - (mix of red-yellow-orange) cut into pieces
  • 100 gram celery - 4 stalks cut into small pieces
  • 100 gram ui - 1 onion, chopped
  • 400 gram chestnut mushrooms - in slices
  • 2 toes Garlic - squeezed
  • 100 gram shallot - 1 large shallot, chopped
  • 75 gram zucchini - in pieces
  • 75 gram root - scraped clean and cut into pieces

And this is how you make it:

  • First, grab all the ingredients from your spice drawer, it may seem like a lot but once you have everything ready, preparing it will be a breeze!
  • Chop/slice all vegetables as described in the ingredients.
  • Cut the meat into cubes and sprinkle with the flour, berbere, ras el hanout some salt and pepper and mix it well. Brown it nicely in a tablespoon of olive oil and leave in the frying pan until use.
  • Heat a frying pan or cast iron pan and add a tablespoon of olive oil and first fry the onion, shallot and garlic over a low heat until translucent, then add the carrot and celery and fry for 5 minutes over a medium heat.
  • Add the rest of the vegetables, mix well and fry for another 5 minutes.
  • Make a hole in the middle of the pan and fry the tomato puree briefly and deglaze with the stock and tomato frito. Add the persillade and the smoked paprika powder.
  • Mix everything well again and add the meat with all the juice from the frying pan, stir and then put the lid on. Let it simmer for 2 hours and then serve with some bulgur for example.
