If you are a fan of pasta then you should definitely try this orzo salad recipe. We have loved these small pasta grains for years. They look like rice but it's just pasta. And can be prepared in many different ways. You can eat this salad lukewarm when you have just made it, but it is also easy to store. A day or two later you can eat it chilled from the fridge.
This is also a nice dish to empty your fridge with. All ingredients that I give you here in this recipe can be supplemented or replaced with leftovers from your fridge. And therefore very easy to adapt to your wishes. This vegetarian spicy Mediterranean orzo salad can be on the table within twenty minutes. This also makes it a nice dish for busy weekdays.
Spicy Mediterranean orzo salad
An orzo salad recipe that is also completely vegetarian. Do you want to serve it vegan? Then you take out the Parmesan cheese and replace it with vegan cheese, or just no cheese. But of course it tastes better with it. Did you know that many of my recipes are very easy to make vegetarian?
Usually you only have to leave out the piece of meat or fish or replace it with the vegetarian option. don't you like spicy food? Then omit the red pepper in this spicy Mediterranean orzo salad.

Ingredients:
- 250 gram barley
- 150 gram spinach
- 3 roasted red pepper - from jar
- 1 Spanish / chili pepper
- 1 shallot
- 10 green olives
- 10 Kalamata olives
- 3 cloves of garlic - finely chopped
- 10 caper apples - (or else 2 tbsp small capers)
- 5 Sun dried tomatoes
- 50 gram Parmesan cheese - grated into curls
- olive oil
- ½ tl chili powder
- salt
- peper

And this is how you make it:
- Chop the shallot and garlic finely, cut the grilled peppers into pieces, the red pepper into rings, and the tomatoes into pieces.
- Take your frying pan and put it on a low heat. Pour a good splash of olive oil into the pan. First fry the shallot and garlic until translucent. Then add the bell pepper, tomatoes and red pepper and let stand while the orzo cooks.
- Boil the orzo with 1 tbsp salt in 1.5 liters of water for 10 minutes. Then drain in a colander.
- Add the orzo to the skillet and mix well.
- Take the bowl and add the spinach, spoon the orzo mix on top and finish the salad with the olives, capers, Parmesan cheese and sprinkle the chili powder on top.
