We are in the middle of summer but the sun, it doesn't really show itself for a while! Time for some comfort food to warm us up and what could be better than a nice soup?! Anyway, I love soup because it's pretty easy to make. This time we make a kind of “pulled chicken soup” with this spicy Mexican chicken soup recipe. A small shortcut, because we don't have to draw a broth completely. Of course you can do that if you have time, but just using a block is also fine. We cook the chicken fillet just until done and then pull it loose. You can read the rest in the recipe!
Spicy Mexican chicken soup
Mexican cuisine is one of my favorite cuisines. I love the colorful, flavorful and spicy dishes you can make with fresh ingredients. Mexican spices are an important part of Mexican cuisine. These give your dishes a delicious kick and an authentic taste. In this spicy Mexican chicken soup we use the fajita spice mix. This one is salt-free, but has enough spice! The salt is enough in the stock cubes so we don't have to add extra salt.
Mexican spices are a mixture of various dried herbs and spices commonly used in Mexican cuisine. The base usually consists of paprika, oregano, cumin, coriander, garlic powder and cayenne pepper or chili powder. You can buy these herbs ready-made or make them yourself with the ingredients you have at home. You can also vary with other spices such as smoked paprika, onion powder, salt, allspice or lemon zest. Add some extra spice by sprinkling fresh red peppers on the soup!

Ingredients:
- 300 gram chicken breast - (2 pieces)
- 2 red pointed peppers - cut into pieces
- 4 toes Garlic - finely chopped
- 300 gram kidney beans
- 400 ml past
- 1 tin can tomato paste
- 1 ui - XNUMX onion - shredded
- 150 gram corn kernels
- 1 avocado - cut into slices
- 2 el fajita spice mix
- 2 bouillon cubes chicken
- 1 red pepper - cut into rings
- 3 celery sticks - in pieces
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Chop the bell pepper, onion, and celery. Chop the garlic.
- Heat your soup (or snacks) pan and pour in a dash of olive oil. Bake the celery, garlic and onion for a few minutes and add the tomato puree and fajita spice mix and fry it for a while.
- In a separate pan you cook the chicken fillets for about 10 minutes. The chicken should be just cooked. Remove from pan and let cool. Then pull the fillets apart into strips.
- Add the passata, kidney beans, corn, bell pepper and stock cubes to the pan and stir well, add some water if it is too thick. Let simmer gently for 20 minutes.
- Add the chicken to the soup and let it cook for a few minutes. (so you know for sure that the chicken is really well cooked!).
- Ladle the soup into bowls and garnish with the red peppers and avocado.
