For me, a Christmas menu is never completely finished if a nice appetizer is not served in advance. Or as an entree. This spicy pepper soup with prawns is another nice addition to my Christmas and soup recipes. Because in principle you can make this kind of tasty soup all year round. Dive into your china cupboard for nice glasses, that makes serving just that little bit more fun. It's just a little bit of spice to whet your appetite for more for dinner. A delicious soup with prawns.

The smoked paprika powder This recipe naturally comes from my partner Van Beekum Spices. My spice drawer is filled with all kinds of herbs and spices and various mixes. Ultimately, they really give your dishes an extra taste experience. Grilling the vegetables in the oven also adds flavor. Of course you shouldn't let your vegetables burn completely, just a small black edge and then it's good.

And this is how you make it:

  • Cut the tomatoes into quarters, chop the onion, red pepper and garlic, and strip the leaves from the herb sprigs. Clean the peppers and cut into large pieces. Place it all on a baking tray lined with baking paper. Pour some olive oil over it and sprinkle with salt, pepper and smoked paprika powder. Place in the oven at 200 degrees until everything is nicely grilled. (the edges of the vegetables may turn a little black).
  • Place the grilled vegetables in a soup pot and add the stock cube and half a liter of water and let it simmer gently.
  • In the meantime, fry the prawns alternately in a frying pan with some olive oil and salt and pepper.
  • Place the hand blender in the soup pot and blend until a nice smooth soup.
  • Serve the soup in nice glasses with the prawns on the edge.
  • Delicious bites!
