Ingredients:

  • 1 bottle gourd
  • 1 white onion
  • 4 tablespoons whipped cream
  • 2 fresh thyme sprigs
  • 1 cube of vegetable stock

From the pantry:

And this is how you make it:

  • Peel the skin of the pumpkin with a vegetable peeler. Then cut it into pieces and remove the seeds.
  • Chop the onion.
  • Take a stockpot and add a dash of chili oil. Fry the onion and the ras el hanout in it. Then add the pumpkin cubes.
  • Crumble the stock into the pan and top up with a liter of water. Let it cook for about twenty minutes until the pumpkin is nice and soft.
  • Puree with your immersion blender until you have a nice smooth soup.
  • Ladle the soup into the bowls and sprinkle in some fresh thyme leaves. Add a spoonful of whipped cream and add some chili oil.
  • Delicious bites!
