It wants this dish to have ended up on my blog because of my husband. He was very excited about this dish. The first time I made it, the cheese didn't melt well enough for my liking. Munster cheese? That sounds very German. Well that can be true in itself because Munster is a small place in the Vosges in the east of France. Germany and Switzerland are nearby. The houses there have that typical stone-wood beams look that is unmistakably part of that region. The name Munster is derived from the Latin word Monasterium which means monastery.
In earlier times, this cheese was also made at these types of monasteries, and this tradition continues to this day. Since 1969, the Munster has had the AOC quality mark, which indicates that it is a traditional and high-quality product.
If you purchase this cheese, it is advisable to store it in a sealed box due to its strong odor. The rind of the cheese is completely edible, so you don't need to remove it before placing the cheese in the oven. Enjoying this delicious cheese has a rich history that goes back to the past!

Ingredients:
- 1 Le Rustique Munster cheese - (available at Albert Heijn / cheese farmer)
- 250 gram pumpkin cubes
- 2 onions
- 100 gr bacon
- 200 gr potatoes in skin
- 2 to 3 tbsp grated old cheese per tray
- 3 el Persillade (spice mix)
- olive oil

And this is how you make it:
- Clean the pumpkin and cut it into small cubes, so you don't need a whole pumpkin, use the rest for a soup or other dish. You can also buy ready-made blocks.
- Chop the onion and cut the potatoes into pieces as well, you do not need to cook them further.
- Take a frying pan and add some olive oil, first fry the onion until translucent and then add the potatoes, pumpkin, bacon and persillade. Fry the whole thing for 10 minutes on medium heat.
- Take the oven dishes and divide the contents of the frying pan among the dishes.
- Sprinkle the old cheese on top, cover with the Munster cheese cut in half. Note cutting edge down. You can eat the orange rind of this cheese.
- Place in a preheated oven at 210 degrees for 25/30 minutes until the cheese has melted nicely.
- Remove from oven and allow to cool briefly before attacking!
