The eternal struggle with spicy dishes. I don't like to eat it because it always upsets my stomach. But I keep trying by adding just a little more red pepper to my dishes every time. This recipe is another one from Liesbeth's stable. She made a vegetarian version, but I added tasty chicken. The herbs I used in this recipe are from spiceM. That's a nice company from Marenka that I once met during a Foodie event. She sells nice and tasty bags with herbs without salt, fat or other additives. Just pure nature, and that way you give a delicious taste to your dishes.

And this is how you make the Pumpkin curry with chicken:

-First we are going to cut the chicken breast into cubes. Then put them in a bowl and sprinkle a tablespoon of Thai herbs and some turmeric on top. Toss it and let it sit for a while to marinate.

-Take the pumpkin and cut it in the middle. Use a good sharp knife and it will work fine. Then you can peel it with a potato peeler. Of course we get the pips out. Chop them into coarse but not too large chunks. I then steamed them for 15 minutes. If you don't have a steam oven, cook them for 15 minutes.

- Cut the pointed pepper into rings and the zucchini into cubes. Finely chop the garlic cloves and the red pepper.

-Take a large frying pan or frying pan and add 1 or 2 tbsp coconut oil. Then first put the finely chopped garlic and the chilli in the pan and let it braise over low heat. Then we add all the vegetables and stir-fry for about 5 minutes on high heat. Then add the diced tomatoes and coconut milk. We are now going to let this simmer for fifteen minutes with the lid on the pan on low heat. Season the curry with salt, pepper and 2 more tablespoons of the spices.

-In another pan fry the chicken cubes until golden brown and add them to the pan last.

Finally, scoop the curry into your bowls and garnish with some fresh parsley or coriander: Delicious Happen!
