Healthy Pumpkin Puree Avocado Chocolate Cake – Sugar Free & Vegan

In this chocolate cake recipe we use maple syrup. This sweet stuff comes from maples, the moisture from these trees is concentrated and you get syrup. But it is still a sweetener. So this cake is not completely sugar-free. But we don't use processed sugars. The rest of the sugars in this pumpkin puree avocado chocolate cake is the sugar found in the fruit, dates or vegetables. I have a large bag of sugar-free chocolate drops in stock. If you don't have that, you can also use dark chocolate bar. It contains less sugar than milk chocolate. We make a ganache with some coconut oil and cocoa powder. All in all, not a complicated recipe!

Ingredients:

  • 100 gr pistachio nuts - (peeled)
  • 200 gr dates without pit
  • 135 gr oatmeal flakes
  • 1 tl vanilla essence

For the filling of the cake:

  • 2 el cocoa powder
  • 180 gr dark chocolate chips
  • 250 gr avocado
  • 225 gr pumpkin puree
  • 60 ml maple syrup

For the ganache:

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Add the pistachios, dates, oat flakes, vanilla essence to your food processor and blend until you get a sticky dough.
  • Line a small springform pan (18-20 cm) with baking paper and grease lightly with coconut oil. Press the dough evenly into the pan, also up against the edges. Use the back of a spoon for a smooth finish. Place in the refrigerator for 30 minutes.
  • Melt the chocolate chips au bain marie and add the melted chocolate along with the avocado pulp, pumpkin puree, cocoa powder, and maple syrup to your food processor and whiz until you have a creamy consistency. Put this on the bottom of the springform. Put in the fridge.
  • Melt the coconut oil gently and stir in the maple syrup and cocoa powder until smooth. Let it cool for 5 minutes before pouring over the cake. Spread evenly with a spoon
  • Now let it set in the fridge overnight.
  • Delicious bites!
