Recently I shared the first part of my trip to Poland and promised you a part two. Of course with a recipe! This time I opted for a delicious Polish bigos meat stew. A “shepherd's” stew, a nice large pan really full of meat, vegetables and a delicious sauce. Actually a very nice dish to empty your fridge with. The original recipe uses a lot more meat, but I chose to stick to bacon and beef only. Sauerkraut is also used in it! That was my first time and I can tell you it wasn't bad at all. Poland and its small-scale production
As mentioned earlier, we have been to various producers who only produce and sell locally. Mostly family businesses that have been supplying their products in certain regions for years and have no intention of supplying internationally. Which is very good on the one hand, but also a pity for us tourists. So you will really have to taste some things in Poland.
Countryside vs the city
We covered a lot of km in the regions around Warsaw! As far as nature is concerned, it can be compared to the Netherlands for me. You see a lot of corn fields, cabbage, apples, pig farmers, and also in terms of trees, plants and shrubs it does not differ greatly from the Netherlands. Of course the country is many times larger and therefore also a lot more green. Poland lies between Germany and Russia and the various wars have left a nice mark on it.
The city is wonderfully modern with all the major brands and conveniences that you can also find with us. The countryside on the other hand is a bit rougher than you will find here. Also regarding the kitchen. Really the somewhat "farmer's" dishes such as this Polish bigos meat stew.
Poland tastes good
The title of the press trip, and therefore the opportunity to taste for yourself how delicious Polish products are. What I especially noticed is that there is often a “sour” to it. Such as “zurek”, a kind of fermented soup, which also has a sour note. But I also noticed in the production of wine and cider that there is a somewhat sour undertone in the stew
Logically, the sauerkraut in this Polish bigos meat stew also gives a light "sour" to the dish. Of course there is also plenty of sweet stuff to be found! There was no end to the shelves with sweet candies and various chocolates in a local Polish supermarket…

Ingredients:
- 500 gram rib steak - in cubes
- 250 gram Zeeland sauerkraut bacon - in cubes
- 5 el flower
- 2 white onions - XNUMX onion - shredded
- 3 toes Garlic - XNUMX onion - shredded
- 400 gram diced tomatoes - canned
- 400 gram champignons - sliced
- 2 winter carrots - cut into rings
- 150 gram dried plums - without spice
- 250 gram sauerkraut - rinsed and drained
- 400 ml beef boullion
- 200 ml Red wine
Herbs and spices:
- salt
- peper
- 1 el paprika powder
- 4 leaves laurel
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Shred, slice and chop the vegetables and meat as indicated above in the ingredients list.
- Grab a bowl and put the cubes of rib steak in it and sprinkle salt and pepper on it. Add the flour and toss to coat the meat all over.
- Heat a cast iron or frying pan and add a good glug of olive oil. Bake the cubes of rib steak, and do this in parts if it's too much to put in the pan at once. Spoon the dark brown baked cubes onto a plate and set aside.
- Fry the bacon in the pan until almost crispy, then add the onions and garlic. Deglaze with the red wine and then add the rest of the ingredients from the list and the spice list. Spoon the meat and juice from the plate into the pan.
- Now let the pan simmer gently for at least 4 hours. Occasionally you can stir everything.
- Remove the bay leaves before serving. Serve with, for example, potatoes.
