“Random act of kindness”, or doing something for someone without expecting anything in return. Nowadays we all spend a lot of time online on various social media and get to know people from all over the world. Years ago I met people through Twitter, which is now called I shared a post and a “random” follower asked me: “As a Foodie, you've probably made nata's before, right?!” Well, no, I didn't have that on my website yet. By this he meant this Portuguese pastel de nata. Sweet puff pastries filled with curd and briefly baked at a very high temperature. I thought great, that's what I'm going to do because why not?! Portuguese pastel de nata
This pastry has many names, pasteis de nata, pasteis de belém, or also pastel de nata. It is a Portuguese delicacy that you are probably familiar with if you have ever been to Portugal. Dusted with icing sugar and served with an espresso. You taste a quite sweet curd in a crispy container. Similar to a crème brulee, or crema Catalana. - 300 ml Full Milk
- 4 egg yolks
- 30 gram wheat flour
- ½ vanilla pod
- 2 roll fresh puff pastry
For the sugar syrup
- 1 citroen
- 150 gram sugar
- 2 cinnamon sticks
- 125 ml water
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- We first make the sugar syrup, peel the zest of the lemon with a peeler. Only the peel, not the white part. Take your pan and add the peels, cinnamon sticks, sugar and add the water. Bring to the boil and let it reduce for a few minutes until you have sugar syrup.
- Pour the sugar syrup through a sieve into a bowl or bowl and let stand until ready to use. This will help you remove the lemon peels and cinnamon without burning your fingers!
- In a bowl, beat the egg yolk with the milk and flour, beat vigorously with a whisk and then pour into a pan and keep beating! Do this over medium heat. Cut open the vanilla pod and use a knife to scrape out the inside and add it to the pan and continue beating. Add half the sugar syrup and whisk, then pour in the other half, you want the consistency of thick yellow custard. This is your curd.
- Unroll the puff pastry rolls from the paper and then roll them up tightly again. (the short side) cut this roll into pieces of 2/3 cm wide. Place the roll with the cut side up and roll it out with a rolling pin into a perfect round in your greased muffin tin. (if you only have 6 compartments, store the other dough in the refrigerator while you bake the other nata's).
- Heat your oven on top-bottom heat at 250 degrees. (or as hot as possible, if your oven goes up to 280 that is also good)
- Fill the puff pastry containers up to the top with the curd, place in the oven and bake for 14 minutes. The curd may get black spots, this is normal!
- Let them cool in the tin for a while when you take them out and then you can easily pop them out and bake another round until all your puff pastry is used up. I got a total of 18 natas from this quantity.
