This pulled chicken avocado salad is anything but boring, super nutritious, tasty, can be prepared in advance, high in protein and just an overall healthy meal!

Of course, everything in this salad can be replaced with whatever you have in your fridge. My free tip for this pulled chicken is to cook it in chicken stock. Because we don't do anything else with the chicken except cook it until done and then pull it apart, you want to give it some flavor. Cooking the chicken in stock gives the chicken some flavor. The rest comes from the other ingredients and the dressing we add.

You need:


  • 400 gram chicken breast
  • 1 block chicken bouillon
  • 1 avocado - cut into slices
  • 1 Red onion - in half rings
  • 70 gram green olives
  • 10 Sun dried tomatoes - cut into small pieces
  • 2 el capers
  • 1 el Persillade (spice mix)

For the dressing

  • ½ citroen - squeezed
  • 2 el olive oil
  • 1 tl mustard

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Boil the chicken fillets in water with the stock cube until the chicken is completely cooked. Remove from the pan and let cool briefly. Then pull apart with two forks.
  • Cut the vegetables as described in the ingredients above.
  • Mix the dressing and put everything in a bowl and then mix well. Season with additional salt and pepper to taste if necessary.
  • Delicious bites!
