Cheese! We Dutch eat kilos of it per year in all shapes and types. But they can also hear about it in Mexican cuisine! What is for us the ordinary sandwich with cheese, is the quesedilla. A “cheese thing” that can be made in many ways. The variations with this recipe are just as endless as with the regular sandwich. Meanwhile, the sandwich lunchrooms are also springing up like mushrooms. I made this delicious quesedilla with Mexican ground beef. Deliciously seasoned minced meat with a fresh guacamole and a generous dollop of sour cream. Quesadillas are one of my favorite dishes to make when I'm in the mood for something tasty, easy, and fun. You can fill them with all kinds of ingredients, but this time I opted for a Mexican twist with minced meat, beans, corn and cheese. A delicious combination that you can make as spicy as you want.

Quesadillas are actually tortillas that you fold in half with a filling in between and then fry in a frying pan or grill pan. They are also called Mexican toasties, and I get that. They are just as crispy and creamy as a good sandwich, but with a different taste. You can serve them as lunch, snack or main course, and they are ideal to share with your family or friends.

For these quesadillas I used ground beef, which I seasoned with a homemade Mexican spice mix. It consists of paprika powder, cumin, oregano, garlic powder, onion powder, salt and pepper. You can also use a ready-made spice mix, but I like to make my own. You can also adjust the amount of salt and pepper to your own taste.

The cheese melts nicely between the tortillas.

You fry the minced meat in a frying pan and then add black beans and corn. This gives extra texture and nutrients to the filling. You can also use kidney beans or other beans if you prefer. You first rinse the beans and corn under the tap to remove the excess starch and salt.

Then it's time to make the quesadillas. You take a large tortilla and put it on a cutting board. You divide some grated cheese over half of the tortilla. I used young cheese, but you can also use old cheese or cheddar for more flavor. Then you scoop some of the minced meat mixture over the cheese and fold the tortilla in half. You repeat this with the rest of the tortillas and the filling.

Then you heat a frying pan or grill pan over medium heat and fry the quesadillas on both sides until golden brown and crispy. You can cut them into quarters before serving. I like to eat it with a fresh salad and some sour cream or guacamole as a dip. This is how you turn minced quesadillas into a complete and delicious meal.

Quesadillas with Mexican minced meat are therefore super simple to make and full of flavor. They are ideal for a weekday or a cozy weekend.

Ingredients:

  • 4 tortillas
  • 2 bags mixed grated cheese - which also contains cheddar
  • 250 gram minced beef
  • 1 tin can corn kernels
  • 1 orange bell pepper
  • 1 large white onion
  • Mexican spices

For the guacamole you will need:

  • 1 avocado
  • 1 little red outing
  • 1 tomato
  • 2 cloves Garlic
  • fresh parsley sprigs
  • 1/2 lime - juice from
  • peper
  • salt
  • 1/2 red pepper

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • First we cut the bell pepper into small cubes and chop the white onion.
  • Then take your frying pan and put the minced meat in it, with a spatula you loosen the minced meat a bit and then add the bell pepper and the onion. Season with the Mexican spices. Cook until all the meat is cooked through. Then put it in a bowl and set it aside.
  • Put all the ingredients for the gacamole in a food processor or measuring cup and mix or turn until you have a fairly smooth sauce. There may still be some coarse pieces in it. Place in the fridge until use. The juice of the lime prevents the avocado from turning brown.
  • In the same frying pan, place the first tortilla, first sprinkle a layer of cheese on top, then spoon the minced meat mixture on top and then a good handful of the cheese. You cover it with the other tortilla. After a few minutes of baking, place a plate on top of the tortilla and turn the pan over. This way the quesedilla is neatly on your plate and you can put it back in the pan with the other unbaked side.
  • After a few more minutes of baking, it is ready. Slide it back on the plate and cut into dots. Serve with the guacamole and a nice dollop of sour cream. And don't forget some tortilla chips
