Never thought I would say it again, but quinoa is quite tasty. And not just for those hip Amsterdam fit girls with all their superfoods and size 32. I chose a tasty mix that also included rice and corn kernels. Add a lot of tasty vegetables and some spicy Gruyère cheese and voilà you can bake these quinoa cupcakes with Gruyère cheese in half an hour. In principle, you could easily replace the quinoa with something else if you don't like it at all. By the way, you can also eat these cupcakes the next day. So also a great way to "meal prep" for lunch. quinoa Savory cupcakes recipe

Gruyère is a type of cheese from Switzerland. It is a semi-hard to hard cheese with a creamy texture and a full, nutty taste. The cheese is made from raw cow's milk and has a hard, golden brown rind and a yellow, porous inside. Known for its versatility, Gruyère is widely used in a variety of dishes, including gratins, fondues and quiches. It is also a popular snack cheese and is often served on charcuterie boards and in sandwiches. If you are looking for a cheese with a rich taste and versatility, Gruyère is definitely recommended!

Just a little while longer, what exactly is that quinoa? It is a plant of the amaranth family. We use the seeds as a food source. This originates in South America. The seeds do not belong to the grains at all, but we actually process it that way. So you can process it like rice, but you can also grind it into flour, and oil can be pressed from the seeds.

A very diverse use of these small grains. They are available in different colours, which not only makes for an attractive appearance, but also for a variety of flavours and textures. All in all, these delicious savoury cupcakes are a great success, perfect for any occasion, from birthdays to informal gatherings. Any leftovers? Just take them to work and share them with your colleagues; they will be impressed by your baking skills! I bought this mix at Albert Heijn, but it is quite easy to get hold of everywhere, which makes it even easier to quickly and easily recreate this delicious recipe.

Ingredients:
- 2 eggs
- 60 gr Quinoa - uncooked
- 1 small can of red lentils
- 1 zucchini
- 1 winter carrot
- 1 white onion
- 5 el flower
- 1 el crème fraîche
- 1 bag Gruyere cheese - grated
- salt
- peper
- spices as desired
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Take the grater and grate the zucchini, the onion and the carrot. This can be done with a coarse grater. Put a little olive oil in a frying pan and let the vegetable grater "fry" in it. Stir regularly so that the moisture disappears from the vegetables and the vegetables are soft.
- Meanwhile, cook the quinoa until tender, about 12 minutes. Drain in a colander. Also drain the lentils.
- Take a large bowl and put the eggs in it. Beat the whole thing lightly. Add the crème frache, all vegetables, quinoa, lentils and the flour. Season with salt, pepper and herbs to taste. Mix it all up.
- Butter the cupcake liners and fill them with the mix. Sprinkle the Gruyere on top.
- Bake in an oven preheated to 180 degrees for 30 minutes.
- Delicious bites!
