Never thought I'd ever say it again, but quinoa is quite tasty. And not just for those hip Amsterdam fit girls with all their superfoods and size 32. I chose a tasty mix that also added rice and corn kernels. Add a lot of tasty vegetables and some spicy gruyere cheese and voilà you bake these quinoa cupcakes with gruyere cheese in half an hour. In principle, you could very well replace the quinoa for something else if you don't like it at all. By the way, you can also eat these cupcakes the next day. The seeds do not belong to the grains at all, but we actually process it that way. So you can process it like rice, but you can also grind it into flour, and oil can be pressed from the seeds.

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Take the grater and grate the zucchini, the onion and the carrot. This can be done with a coarse grater. Put a little olive oil in a frying pan and let the vegetable grater "fry" in it. Stir regularly so that the moisture disappears from the vegetables and the vegetables are soft.
- Meanwhile, cook the quinoa until tender, about 12 minutes. Drain in a colander. Also drain the lentils.
- Take a large bowl and put the eggs in it. Beat the whole thing lightly. Add the crème frache, all vegetables, quinoa, lentils and the flour. Season with salt, pepper and herbs to taste. Mix it all up.
- Butter the cupcake liners and fill them with the mix. Sprinkle the Gruyere on top.
- Bake in an oven preheated to 180 degrees for 30 minutes.
