The mojito cocktail is a classic that has been around since the 16th century and I love it. It's a refreshing blend of rum, lime, mint and sugar that's perfect for a summer day. Personally, I don't like a very strong cocktail, so I'm always careful with the amount of rum. I like to sweeten the mojito with a homemade rhubarb syrup.

You can store the syrup in the refrigerator.

This gives the cocktail a beautiful pink color and a fruity taste. Incidentally, this rhubarb syrup mint mojito can also be drunk virgin. We then leave out the rum and add some sparkling water. The nice thing about shaking cocktails is that you can let your imagination run wild. Combine, try and experiment. For example, you can also use other fruits or herbs to give your mojito a twist.

You need:

Ingredients:

  • 2 stems rhubarb
  • 80 gram sugar
  • 150 ml water
  • 3 twigs fresh mint

For the mojito:

  • 45 ml white rum
  • 3 tl rhubarb Syrup
  • 15 ml lime juice
  • 90 ml sparkling water
  • crushed ice

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Let's make the syrup first. Wash the rhubarb stems and then cut them into small pieces. Put them together with the sugar, water and mint in a saucepan and bring to the boil. Let it simmer for 15 minutes on low heat with the lid on the pan. Then pour through the colander into a clean bowl and let it cool.
  • Making the Mojito: The amounts above are for one mojito.
  • Put a few mint leaves in the glass and pour in the syrup. Press the leaves briefly with a pestle and then top up the glass with ice.
  • Pour in the rum, sparkling water and lime juice and mix briefly.
  • Serve with a wedge of lime and some mint.
