Gelato Italiano! Ciao ragazzi, we are in the summer mood because we are going to talk about ice cream and not just any ice cream, but Italian ice cream in other words, gelato. And yes there really is a difference between Italian ice cream and the rest of the world! Of course you will receive a recipe from me: A recipe Italian pistachio ice cream. We are going to make pistachio ice cream without an ice cream maker.
First some facts about Italian ice cream:
Ice to consume was already made in Roman times. The real Italian 'gelato' dates back to the 16decentury.
However, it is not the Romans who invented ice cream, it was the Arabs. They also brought it to the Roman Empire (Italy). However, the Italians have now proven that they are kings in ice cream.
Ice making is a craft in Italy, there are also special ice cream schools.
There are about 30.000 gelaterias (ice cream parlors) in Italy.
Ice is traditionally kept in elongated steel barrels with a lid. So you don't see the ice cream in traditional ice cream parlors. In addition, the ice cream is scooped with a spatula.
But what makes Italian ice cream so special?
There is a solid difference between Italian ice cream (gelato) and normal ice cream as we know it. Italian ice cream is made with more milk instead of cream. In addition, there is less air in the Italian ice cream, so that the flavors come into their own and the ice cream has a fuller taste. Finally, the Italian ice cream is kept at -13 degrees and normal ice cream at -18 degrees.
Due to the cold temperature, your tongue will freeze faster and you will taste the ice cream less. Italian ice cream really tastes better! Making your own ice cream clicks very difficult, but it is not. I have a recipe here for Italian pistachio ice cream, my favorite flavor!

Ingredients:
- 150 ml milk
- 120 gr sugar
- 180 gr pistachio cream - (for sale at Dille and Kamille, among others)
- 100 gr pistachio nuts - unsalted
- 250 ml undefeated whipped cream
- ¼ tl salt
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Place the milk and sugar in a saucepan and bring to the boil. Let it cook for about 10 minutes, stirring regularly.
- At a certain point a creamy, thick substance is formed, this is condensed milk. Let it cool completely.
- Then put the condensed milk in the mixing bowl and mix in the pistachio cream and a pinch of salt.
- Grind the pistachios finely or coarsely (whichever you prefer) and burn them in a frying pan without oil for a few minutes. Let it cool for a while and then add it too. Stir well.
- Beat the cream with the mixer until light and firm. Then add the whipped cream to the bowl and stir gently so that the whipped cream does not lose its fluffiness.
- Put the whole thing in a container or bowl and let it rest overnight in the freezer. The next day you can remove the ice cream with an ice cream scoop and serve.
- Garnish with some extra pistachio nuts or chocolate chips!
