And this is how you make it:
- Cut the zucchini into wedges and chop the onion. Put a dash of olive oil in a frying pan and fry the zucchini briefly over high heat. Add the chopped onion and fry it.
- Bake until the zucchini is soft and then let it cool in a bowl.
- Meanwhile, beat the eggs in a deep plate or bowl. Gradually add the Parmesan cheese, making sure there are no lumps.
- Chop the parsley finely, add it together with the zucchini/onion and add some salt and pepper to taste. Stir this well.
- Clean the frying pan and heat again with a little bit of olive oil. Add the egg mixture and make sure the courgettes are evenly distributed in the pan.
- Do not set the heat too high, otherwise the bottom will cook too quickly. Put a lid on the pan (if you don't have a lid, you can also use aluminum foil) and let the frittata cook slowly.
- When the bottom is dry, carefully flip the frittata and cook the other side as well. Then carefully scoop it onto a plate.
