Eating healthier really doesn't just mean munching on carrots and celery stalks. You can also treat yourself to a delicious cheesecake. Yes, we are going to make cheesecake! And the bottom is also made with chocolate chip cookies. These are also sugar-free but taste just as good as regular cookies. All in all, no punishment to prepare this recipe sugar-free strawberry cheesecake. It's a no-bake cake which means all we need is a fridge and a blender or food processor.

If you want to make this sugar-free strawberry cheesecake recipe without animal products, you can use agar agar instead of gelatin. Agar agar is a vegetable binder made from seaweed. I tried that too, but I wasn't very happy with the result. The cake did not stiffen properly and the texture was also less beautiful than with gelatin. Maybe I should have used more agar agar, but I'm not sure.

Don't you think the cake is sweet enough? Then use 2 to 3 tablespoons of erythritol, which is a sugar substitute but gives that sugary taste to your cake. Well the taste but not the calories and that makes a difference!

Ingredients:
- 400 gram low-fat quark
- 200 gram strawberries
- 200 ml blood orange juice
- 10 sugar-free chocolate chip cookies
- 50 gram butter - molten
- 8 gelatine leaves
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Grab your (small) food processor and put all the cookies in it. Turn until the biscuits are ground to a crumb. Pour in the melted butter and mix well.
- Place a sheet of baking paper on the springform, put the ring on it and click into place. This way you get a super tight bottom. You can cut the rest on the outside. Cut two long strips that you press against the edge.
- Spoon the biscuit crumbs into the springform pan and press down well with the back of a spoon. Put in the fridge.
- Place the sheets of gelatin in a pan with cold water until they are soft. That takes about five minutes.
- Juice the blood oranges and put this in your blender with the strawberries (without crowns), turn until the strawberries have become juice and add the quark. Turn again so that it is well mixed.
- Squeeze the gelatine leaves and put them in a saucepan with 5 tbsp water. Heat so that the gelatin becomes liquid, but do not let it boil. Stir well and let cool. Then add it to the strawberries in the blender and turn once more so that the gelatin is well mixed. Pour it into the springform pan.
- Let the cake set in the fridge for about 3 hours.
