-The main course is always something to plan because of course there has to be more on the plate than just a piece of meat. For example, you can make the puree and the cranberry sauce a day in advance so that you don't have to stress about it anymore.

-To make the puree, take the parsnips and peel them. Then chop them into cubes. Also clean the cauliflower and cut it into small florets. Then put this in a pan and add 500 ml of milk, bring to the boil and let the vegetables become completely soft. Then drain and put everything in a food processor. Blend until smooth and season with nutmeg, pepper, salt, and garlic puree. Save until use.
-The cranberry sauce is also not very complicated to make. Place the cranberries in a saucepan with the sugar and all the spices. Bring to the boil with about 200 ml of water and let it simmer until all the cranberries have popped. Then let it bubble for XNUMX minutes and stir it well every now and then. If you want to give it even more flavor, use port instead of water. Then set aside until use.
Prepare the vegetables
-In my case I have a steam oven at home, this is a very easy way to cook your vegetables and they keep their shape and color! If you don't have one, you can also use a pan with a steamer basket. Clean the carrots and add the green asparagus and put in the steam oven for 10 to 15 minutes until they are al dente.

-Put the red potatoes in an oven dish with some olive oil, salt and pepper and, for example, a spicy spice mix in the oven at 200 degrees for 30 minutes until they are cooked.
- Cut the cucumber into long strips with a cheese slicer, then cut them in the middle and roll them up.
-Fry the mushrooms in a frying pan.
-And while you are preparing all this you can heat the plates on, for example, a number of rechauds. But you can also put the plates in the bottom of the oven just before the potatoes are ready. This just takes a little planning.
- Finally, we fry the roe steak in a pan with some olive oil and shortening. How long she will bake you depends on your preference, if you want the inside to be a nice rosé, you should certainly not bake them too long!
