Ricotta lasagna rolls with persillade

Are you also a pasta lover? I like it very much and was therefore happy when I saw the Gourmand at the checkout of the French supermarket this summer. The inspiration for this dish comes from this nice little magazine. I did give it my own twist with the contents of these ricotta lasagna rolls. And in principle you can fill this in in many ways. Of course you could also work with cannelloni and fill it, but this recipe is a fun job to do. ricotta lasagna recipe

All in all not complicated at all and also approved by Luuk van luukskitchen. He was at my house and saw the bowl and immediately asked me: "Oh can I taste that?". Always nice when what you have cooked is approved by someone other than my own husband haha, I say get started!

    And this is how you make the Ricotta lasagna rolls:

    -We will first grate or finely chop the zucchini in your food processor. Then put the grater in a clean tea towel and wring out all the moisture. Then put the grater in a large bowl.

    -Preheat your oven to 200 degrees.

    -Take the sun-dried tomatoes, garlic clove and spring onions and put them in the food processor and grind them fine, add this to the zucchini.

    -Bring a large pan of water to the boil and add the lasagna sheets, let them soak for a while until they become soft. While they are soaking, cut the mushrooms into fine pieces and fry them in a frying pan with some olive oil until they are soft. You also add this to the bowl.

    Mix all the vegetables in the bowl and season with the persillade, salt and pepper. Finally, add the ricotta to this bowl and make sure you mix everything together.

    -Remove the sheets from the pan and spread them with this mixture. Then carefully roll them up and cut them through the middle. Place these rolls in an oiled oven dish. Fill the dish completely with rolls. Finally, pour a generous dash of olive oil over it. lasagne ricotta recipe

    -Place the dish in the oven and bake for 10 to 15 minutes until the edges start to brown a little.

    Serve the rolls nice and hot and sprinkle some parmesan cheese over them
