Sweets. I have such an incredible love-hate relationship with it! We all know that we should not eat too much sugar because it is not healthy. And pie and cake can't exactly be called healthy... But they are tasty, although that is also quite complicated for me. For example, I hate pastry cream. When I think about most cakes, never mind, it's not for me. Baking is of course a super accurate job and sometimes it has to be accurate to the gram otherwise your cake or cake will collapse and everything will fail. And that's exactly what I don't feel like and time for… Well this ricotta sheet cake with fruits is easy peasy and can't go wrong and so it suits me very well for that reason alone!
And this is how you make the Ricotta plate cake with fruits:
-Preheat your oven to 180 degrees.
-This is the moment for me to really prepare all ingredients in containers so that I can be sure that I am not forgetting anything and that all proportions are correct and everything is ready to the gram.
- Take a baking tray and line it half with baking paper. I folded the baking paper into a rectangle with a slightly raised edge.
- Grab your hand mixer or food processor and add the butter, sugar, vanilla sugar and beat until creamy. That will take a while so be patient!
Then beat in the eggs one at a time and then the ricotta. Then sift the flour and baking powder into the bowl and mix it into a nice batter.
- Use a silicone spatula to scoop the dough into the mold and then gently press the fruits into the dough.
-Place in the oven for about 25 to 30 minutes, you can pierce it with a skewer to see if it is cooked. If the skewer comes out clean, it's good.

Tip: I used a box of fruit from the freezer compartment and let it thaw before I put them in the cake.
