I can tick the box for forgetful. I can sometimes forget the craziest things and I can't live without an agenda or lists. Birthday cards, a promised phone call, there is no harm behind it, but so many things often run through my head that I sometimes forget something. That also happens to me regularly when cooking, then I have thought of something and then a specific vegetable has to be in it, to find that vegetable happily in the fridge a day later. Or what also happened to me once: make a beautiful chocolate butterfly for a dessert and just serve the dessert without the butterfly. Italian flat cake Ricotta figs recipe
The inspiration for this dish came from Saskia from The Backingbucketlist. She posted a picture with figs and yes you guessed it…. I forgot to use those figs in another dish. But maybe a good thing, because otherwise you would have had to miss this delicious ricotta plate cake with figs.

And so you see what a little “forgetfulness” can bring for beautiful new things. This is of course a recipe that can be completely adjusted to your own insight. For example, if you can't get the black garlic, just use the normal garlic.
Roast it in the oven first, so it loses a bit of its sharp taste. By the way, my husband thought this was more of an appetizer than a real main course, make it a delicious pasta if necessary 😉

Ricotta tart with figs

- 3 ripe figs
- 1 role puff pastry - from the fresh produce
- 4 slices Parma ham
- 8 Kalamata olives
- 1 big shallot
- 3 cloves black garlic
- 3 twigs thyme
- 1 bush golden dragon
- 200 ml ricotta cheese
- 1 tl ground black pepper
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- First preheat your oven to 200 degrees.
- Remove the puff pastry from the packaging and place a sheet of baking paper on a baking tray. Lay the rolled out puff pastry on it.
- Take a bowl and put the ricotta in it.
- Chop the shallot, finely chop some tarragon and thyme and add this to the bowl with the ricotta. Cut the cloves of black garlic into small cubes. (Black garlic is a bit stickier than fresh white garlic) Season with the freshly ground black pepper. Mix it all together and spread it on the puff pastry.
- Leave the edges free of the mixture. Then cover the pie with the Parma ham, sliced fig and halved Kalamata olives.
- Bake the tart for 20 minutes in the oven at 200 degrees. (Until the edges are a nice golden brown).
- Garnish the plate cake with some fresh sprigs of thyme and tarragon
