The little tastemaker! And we are talking about none other than “our” own Dutch shrimp! How cool is it that the MSC label has now been given to the shrimp sector. This means that fishing is done in a sustainable way. But also the preservation of the nature reserves and no overfishing. All in all, a product to be very proud of. To celebrate this, I was challenged to come up with a tasty recipe with of course these little rascals incorporated. A delicious combination and not at all difficult to make!
And this is how you make Risotto balls with Dutch shrimps:
-First we are going to finely chop the shallots and the garlic clove. Then take a heavy-bottomed frying pan and add a little olive oil. Saute the shallots until translucent, then add the garlic clove.
- Add the risotto rice to the pan and fry for a minute. Then pour in the wine and stir briefly, let the rice absorb the wine completely over a low heat. Then add a tablespoon of fish stock each time until the rice is completely soft. You may have some broth left over. Deep fried Risotto balls
-When the Risotto When done, stir in the parmesan cheese and add the shrimps and some pieces of samphire. Then let it cool. (I just left it overnight and started spinning the balls the next day.)
Making the balls:
-Put the three bowls ready on your counter, the order is flour, beaten egg, and finally the panko. Then roll the risotto into balls the size of a bitterbal and place them on a plate.
-Then you roll the balls in the flour, the egg and the panko and you have nice breaded balls.
- Turn on your deep fryer (or fry them in olive oil in a frying pan) and fry the balls until golden brown in about 4 minutes.

Finally, serve the balls with a tasty dip such as aioli or truffle mayonnaise.
