For this delicious crayfish ratatouille with samphire recipe we use a special ingredient: samphire. This is a plant that grows along the coast and has the salty taste of the sea. Samphire goes very well with fish and crustaceans, such as crayfish. We do not let the samphire cook too long with the ratatouille, so that they remain a bit crispy. This way you get a nice contrast in texture and taste. You don't have to look far to find samphire. Nowadays you can just buy it in the supermarket. It's usually in the fish department, in little boxes. You can also find it at the market or at the greengrocer.
You can easily eat this ratatouille a day later. It will then be even tastier because the flavors are well absorbed. The next day, briefly heat in the pan or in your steam oven.

Ingredients:
- 400 gram crayfish
- 1 Eggplant
- 1 zucchini
- 400 ml past
- 3 tomatoes
- 1 big yellow onion
- 2 tablespoons capers
- 100 gram samphire
from the pantry:
- salt
- peper
- 2 tablespoons Persillade (spice mix)
- olive oil
- 2 toes Garlic
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Cut the eggplant, zucchini, and tomato into small cubes.
- Chop the onion and garlic.
- Take your frying pan and add a splash of olive oil. Fry the onion and garlic for a few minutes and then add the rest of the vegetables. Bake for a few minutes.
- Add the persillade, capers and some pepper to taste. Be careful with salt because the samphire is already salty by itself.
- Add the passata and let it simmer for half an hour. Finally, add the samphire and crayfish and heat through.
- Serve with delicious Burgundian bread.
