You need:

Ingredients:

  • 400 gram crayfish
  • 1 Eggplant
  • 1 zucchini
  • 400 ml past
  • 3 tomatoes
  • 1 big yellow onion
  • 2 tablespoons capers
  • 100 gram samphire

And this is how you make it:

  • Cut the eggplant, zucchini, and tomato into small cubes.
  • Chop the onion and garlic.
  • Take your frying pan and add a splash of olive oil. Fry the onion and garlic for a few minutes and then add the rest of the vegetables. Bake for a few minutes.
  • Add the persillade, capers and some pepper to taste. Be careful with salt because the samphire is already salty by itself.
  • Add the passata and let it simmer for half an hour. Finally, add the samphire and crayfish and heat through.
  • Serve with delicious Burgundian bread.
