After having had a number of parties, the refrigerator was full of leftover vegetables. It would be a shame to throw it away and so I thought about what I wanted to do with it. It is autumn and cold weather at the moment, so I made a red cabbage dish with sweet potato puree from the oven. Also delicious with Elstar apples, cinnamon and yellow raisins and the kitchen smells nice of autumn. red cabbage dish recipe

And this is how you make the Red cabbage dish with sweet potato puree:
-First preheat your oven to 200 degrees.
- Cut the red cabbage into thin strips and then chop them a bit finer. Peel and core the Elstar apples. Cut these into fine cubes as well. Peel the sweet potatoes and cut them into cubes.

Boil the potatoes with some salt for 20 minutes until nice and soft.
-In the meantime, crumble the minced meat in a frying pan and add the red cabbage, apples and raisins. Mix everything well and sprinkle the cinnamon powder over it. Season it with some more salt and pepper.
When the potatoes are done, drain them and put them back in the pan. Add 30 grams of butter and use a pestle to make a puree. Take an oven dish and put the minced meat-vegetable mixture in it first. Then spoon the puree on top and smooth it out nicely. Finally, sprinkle on the breadcrumbs and a few small cubes of butter. Put it in the oven for about 20 minutes so that it has a nice crispy crust.
Take your plates and carefully spoon some of the casserole onto each plate, serve with a nice red wine
