Red pesto is a tasty Italian mixture of sun-dried tomatoes, freshly ground Parmesan cheese, basil, roasted pine nuts and olive oil. Grinding ingredients into a thick sauce creates a rich, savory and colorful pesto, ideal as a spread, pasta ingredient or soup base.

We'll make the red pesto first. Grab your food processor and add all the ingredients for the pesto except the olive oil. Blend until smooth and then add some olive oil until smooth.

- Take a large stockpot and put a liter of water in it. Bring to the boil and then add 2 stock tablets. When these have completely dissolved, add the tortellini and let them simmer on low heat for another six minutes until they are soft.

-Then add the cream, the red pesto and the Tom tomatoes that you have cut through the middle. Gently stir everything together with a ladle and then let it cook for another two minutes on low heat. This makes the tomatoes nice and soft and gives the soup some extra flavor.
